Biscomais with chilli pepper
Toasted bread with corn flour and pieces of dried Calabrian chilli pepper.
From a mixture of Water, sourdough, corn flour, chilli pepper and salt comes the "Biscomais" of Don Giovannino which is first cooked normally in a wood oven for about 2 hours, then it is broken up obtaining small pieces, which placed in a pan with the cut side facing upwards are baked again in the wood oven at a low temperature but with a very slow cooking. The slow cooking lasts about 7 hours and manages to dry the product almost completely making it crunchy and fragrant at the right point, immediately after it is left to cool to be bagged quickly in order not to lose the friability.

Not being an industrial bakery but strictly artisanal , Don Giovannino's Biscomais is cooked and toasted in our ancient wood-fired oven .
