Biscuit bread is generally called this way because it is cooked twice, specifically the first time for the normal cooking of bread and then the second time to Biscuit it. This is kneaded and made into a loaf and incisions are made on the upper part, in order to be able to break it into small pieces once cooked and cooled.

Product originating from a very poor culture, once upon a time they simply took stale bread and toasted it to ensure it didn't get wasted, even though today there are still excellent recipes such as the " Panzanella " or the Apulian " Cialledda ".

Ingredients : Whole wheat flour, water, sourdough starter and salt.
