A product originating from peasant culture, toasted bread is simply a loaf of bread that is cut and cooked for the first time and then broken into small pieces and toasted in a wood-fired oven , making it dry and hard.
The first cooking lasts about 2 hours at an average temperature of 250 degrees , then it is toasted at about 130 degrees for 7 or 8 hours.
Ingredients : Stone-ground Senatore Cappelli wheat flour, sourdough starter, water and salt.
